I’ve been working for the last month as a chef on luxury yachts! Here’s the latest dishes I’ve whipped up while cruising the Mediterranean..


Island seared scallops with mango avocado roasted red pepper; passionfruit champagne jus




roasted beet carpaccio fresh goats cheese orange saffron reduction




barbue (a flat fish like sole), sweet potato puree asparagus and passionfruit coulis



baby radicchio warm gorgonzola dressing hazelnuts golden grapes
